Using a potato masher, smash them into a pulp. FWIW, I’ve never had a bloat nor an off can from what I’ve canned at home. I think I’ll stick with this design for awhile. I like having labels on the lids; easy to see at a glance and I don’t have to try to remove them and their glue off of the jar. These are the ones I use in salads or making humus. These "canning" directions call for baking in the jar and then closing with a canning lid.

I will need to re-read the book, so much information, as I begin using the methods to preserve my garden produce and the food I get from the grocery. I found an intriguing recipe for orange marmalade in Rachel Saunders ' The Blue Chair Jam Cookbook. As the jar cools, the steam turns to water and a vacuum starts to form in the jar. Our test produced six quart jars and needed 2-3 extra cups of puree. The hot water bath canning method is for foods that are acidic (pH below 4.6), such fruits, pickles, sauerkraut, jams, jellies, marmalades, and fruit butters.

Wombles has experimented in several times with the jar desserts. Ah, that would be because the food scientists are trying to keep you alive. Spit no where in the room but in the corner...'... Screw lids on and let stand on counter for 30 minutes - 1 hour until the jam firms up. What I use this on: I used this pretty much in place of it’s tomato counterpart. For other foods, like dairy, meats and low acid fruits and vegetables, I think this method would be clearly unsafe.
